General Tso's chicken is one of my go to dishes at a Chinese restaurant. I have tired several baked recipes, but none of them were good enough to keep, that is until now. This baked General Tso's Chicken is so good and fairly simple to prepare.
Baked General Tso's Chicken
Ingredients:
- 1 pound boneless skinless chicken breasts
- 1/4 cup all purpose flour
- 2 eggs
- 2 cups panko bread crumbs
- 3/4 cup low sodium chicken broth
- 1/2 tablespoon tomato paste
- 2 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 1/2 teaspoons sriracha sauce
- 3 tablespoons rice vinegar
- 1 1/2 tablespoons granulated sugar
- 2 tablespoons corn starch
- 2 tablespoons water
Directions:
- Move an oven rack to the upper middle part of the oven.
- Preheat the oven to 450º F.
- Cover a baking sheet with a silpat or parchment paper.
- In a medium bowl add the flour.
- In another medium bowl add the eggs and lightly beat.
- In a large bowl add the panko bread crumbs.
- Cut the chicken breasts into 2 inch pieces.
- Coat each piece of chicken with the flour, then the eggs and lastly the panko, lightly pressing down to make sure the panko sticks.
- Place the chicken on the prepared baking sheet.
- Bake for 13 minutes or until the chicken is completely cooked and golden brown.
- While the chicken bakes, in a large skillet combine the chicken broth, tomato paste, soy sauce, hoisin sauce, sriracha sauce, rice vinegar and granulated sugar.
- Bring the mixture to a gentle boil.
- While the sauce comes to a gentle boil combine the corn starch and water until well mixed.
- Once the sauce comes to a gentle boil, slowly add the corn starch mixture to the sauce while stirring.
- Cook the sauce until it has slightly thickened, about 1-2 minutes. Remove from the heat.
- Once the chicken is done baking, add it to the sauce and gently stir to coat the chicken in the sauce.
