Lately I have been making some French toast casseroles, but they have not been a big hit with my husband. He told me he prefers to have "regular" French toast.
Since I have been spending the last few Saturday mornings in the kitchen preparing a special breakfast for the family I did not want to make "regular" French toast that would require me to stand over a griddle.
So I decided to try this recipe where all the prep work is done the night before and all I have to do in the morning is preheat the oven and put the baking dish in. I was really hoping that my husband would like this French toast since it is more like "regular" French toast.
The result was exactly what I was hoping for, he liked it. Plus my kids loved it. I loved that the French toast came out with a sweet crispy topping.
Overnight Raspberry Creme Brulee French Toast
Ingredients:
- 1 loaf French bread, about 16 ounces
Brown Sugar Base
- 1/2 cup unsalted butter
- 1 cup packed brown sugar
- 2 tablespoons corn syrup
Egg Mixture
- 5 eggs
- 1 1/2 cups half and half
- 1/3 cup brown sugar
- 1 teaspoon vanilla extract
- 12 ounces frozen raspberries
Directions:
- Spray a 9x13 baking dish with cooking spray.
- In a small saucepan add the butter, brown sugar and corn syrup.
- Heat over medium heat stirring often, until smooth and combined.
- Pour the mixture into the prepared baking dish and spread around to cover the entire bottom.
- Place the bread slices, in a single layer, on top of the brown sugar mixture.
- Sprinkle the frozen raspberries over the bread slices.
- In a large bowl, whisk together the eggs, half and half, brown sugar and vanilla.
- Pour the egg mixture over top of the bread pieces making sure to cover each piece well.
- Cover the baking dish with aluminum foil and refrigerate overnight.
- In the morning preheat the oven to 350º F.
- Uncover the baking dish and bake for 25-30 minutes.
- Remove the bread slices from the baking dish and flip over so the brown sugar side is facing up.
- If you are not serving the french toast right away, still flip the french toast over so it does not stick to the bottom of the baking dish.
