Crock Pot Sausage, Spinach and White Bean Soup: Savory Sweet and Satisfying

There is something so comforting about soup. I could eat it for lunch or dinner and could eat a bowl full everyday. But only durning the cold months. I have no desire to eat soup when it is warm out so I make the most out of the cold months and make as many soups as I can. My husband often refers to it as soup season.

There are a few things I look for in a soup and the most important, besides taste, is how easy it is. I do not mind chopping some vegetables, or cooking some meat first, but if the soup requires a lot of work I tend to not want to make them. I feel a soup should be easy to prepare and not require me to be in the kitchen for a long time.

This soup meets the requirements of being tasty and easy to prepare. With about 10 minutes of prep work you can have this tasty soup in the crock pot.

Crock Pot Sausage, Spinach and White Bean Soup

Ingredients:
  • 1 tablespoon olive oil
  • 12.8 ounces smoked andouille sausage
  • 3 cloves garlic, minced
  • 1 yellow onion, diced
  • 3 carrots, peeled and diced
  • 2 stalks celery, diced
  • 2-15 ounce cans cannellini beans, drained and rinsed
  • 1/2 teaspoon dried oregano
  • 2 bay leaves
  • 4 cups reduced sodium chicken broth
  • 2 cups water
  • black pepper, to taste
  • 3 cups baby spinach
Directions:
  1. In a large skillet, heat the oil over medium-high heat.
  2. Thinly slice the sausage and add to the skillet. Cook stirring frequently until the sausage is lightly browned, about 3-4 minutes.
  3. Transfer the sausage to the crock pot and add in the garlic, onion, celery, beans, oregano and bay leaves.
  4. Pour the chicken broth and water into the crock pot and season with black pepper. Stir well to combine everything.
  5. Place the lid on the crock pot and cook on low for 7-8 hours or on high for 3-4 hours.
  6. Add in the spinach and stir until it is wilted.
  7. Serve immediately.
