Butterscotch Muffins

Butterscotch Muffins: Savory Sweet and Satisfying

One of my daughters requested butterscotch muffins. So I went to look up my chocolate chip muffin recipe, because it would be really easy to switch out the chocolate chips for butterscotch, and realized I did not have one. So I searched the internet and found a chocolate chip muffin recipe that looked to be a good one.

The muffins turned out soft and fluffy with a nice dome top. Plus the butterscotch chips made them extra delicious. 

Butterscotch Muffins

Ingredients:

  • 4 tablespoons unsalted butter, melted and cooled
  • 1/4 cup canola oil
  • 1 cup granulated sugar
  • 1 egg, room temperature
  • 1 egg white, room temperature
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup buttermilk, room temperature
  • 1 3/4 cups all purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons cornstarch
  • 1 cup butterscotch chips

Directions:

  1. In a large bowl, stir together the melted butter and canola oil until well mixed.
  2. Add in the sugar and stir until well mixed.
  3. Add in the egg, egg white and vanilla extract. Stir until well mixed.
  4. Add in the buttermilk and stir until well mixed.
  5. In a medium bowl, whisk together the flour, baking powder and corn starch.
  6. Gently fold the dry ingredients into the wet.
  7. After half of the dry ingredients have been incorporated, add in the butterscotch chips and continue to gently fold until all of the ingredients have just been incorporated. Do not over mix.
  8. Cover the bowl with a clean and dry kitchen towel and let the batter sit for 15 minutes or up to 1 hour.
  9. Preheat the oven to 425º F. Line a muffin tin with liners.
  10. After the oven has preheated, divide the batter evenly between the 12 muffin cups.
  11. Bake for 8 minutes, then reduce the oven temperature, without opening the door, to 350º F. Bake an additional 5-8 minutes or until an inserted toothpick comes out clean.

Notes:
Instead of the butterscotch chips, you can substitute any flavor of chip you would like.
