With my husbands love of Chinese food, I like to try and make some dishes at home for him. This one was a winner. It has great sweet and sour flavor with a hint of spice. Plus it is not hard to make and it is baked not fried.
Baked Sweet and Sour Chicken
Ingredients:
- 1 pound boneless skinless chicken breasts
- 1 1/2 cups panko breadcrumbs
- 1 egg
- 3/4 cup granulated sugar
- 1/2 cup apple cider vinegar
- 1/4 cup ketchup
- 1 tablespoon Sriracha sauce
- 1 tablespoon reduced sodium soy sauce
- 1/2 teaspoon garlic powder
- 1 tablespoon cornstarch
- 2 tablespoons water
Directions:
- Preheat the oven to 400º F. Line a baking sheet with a silpat or aluminum foil sprayed with cooking spray.
- Cut the chicken into bite sized pieces.
- In shallow bowl, whisk the egg.
- Add the panko to another shallow bowl.
- Coat the chicken pieces in the egg and then in the panko, pressing the panko into the chicken. Repeat until all of the chicken pieces have been coated.
- Bake the chicken for about 20 minutes or until the chicken is completely cooked and panko is turning golden brown.
- Meanwhile, in a medium saucepan combine the granulated sugar, vinegar, ketchup, Sriracha, soy sauce and garlic powder. Bring the mixture to a low boil over medium heat, stirring often.
- Stir together the cornstarch and water. Once the mixture reaches a low boil add in the cornstarch and water mixture and stir to combine. Continue to cook over medium heat, stirring often, until the sauce thickens.
- Once the chicken is done add it to the sauce and stir gently to coat.
Notes:
This recipe makes enough sauce to coat the chicken, if want more sauce double the sauce ingredients.
