Baked Sweet and Sour Chicken

Baked Sweet and Sour Chicken: Savory Sweet and Satisfying

With my husbands love of Chinese food, I like to try and make some dishes at home for him. This one was a winner. It has great sweet and sour flavor with a hint of spice. Plus it is not hard to make and it is baked not fried.

Baked Sweet and Sour Chicken

Ingredients:

  • 1 pound boneless skinless chicken breasts
  • 1 1/2 cups panko breadcrumbs
  • 1 egg
  • 3/4 cup granulated sugar
  • 1/2 cup apple cider vinegar
  • 1/4 cup ketchup
  • 1 tablespoon Sriracha sauce
  • 1 tablespoon reduced sodium soy sauce
  • 1/2 teaspoon garlic powder
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Directions:

  1. Preheat the oven to 400º F. Line a baking sheet with a silpat or aluminum foil sprayed with cooking spray.
  2. Cut the chicken into bite sized pieces.
  3. In shallow bowl, whisk the egg.
  4. Add the panko to another shallow bowl.
  5. Coat the chicken pieces in the egg and then in the panko, pressing the panko into the chicken. Repeat until all of the chicken pieces have been coated.
  6. Bake the chicken for about 20 minutes or until the chicken is completely cooked and panko is turning golden brown.
  7. Meanwhile, in a medium saucepan combine the granulated sugar, vinegar, ketchup, Sriracha, soy sauce and garlic powder. Bring the mixture to a low boil over medium heat, stirring often.
  8. Stir together the cornstarch and water. Once the mixture reaches a low boil add in the cornstarch and water mixture and stir to combine. Continue to cook over medium heat, stirring often, until the sauce thickens.
  9. Once the chicken is done add it to the sauce and stir gently to coat.

Notes:
This recipe makes enough sauce to coat the chicken, if want more sauce double the sauce ingredients.
