I love how easy this dish was to make. The chicken and broccoli cooked together in the oven and then was topped with the bacon and cheeses and baked for a few more minutes. This created an easy and delicious dinner.
Broccoli, Bacon and Cheddar Cheese Chicken
Ingredients:
- 1 tablespoon olive oil
- 4 boneless skinless chicken breasts
- black pepper, to taste
- 1 pound frozen broccoli florets
- 6 slices bacon, cooked and crumbled
- 1/3 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
Directions:
- Preheat the oven to 400º F.
- Grease the bottom of a 9x13 baking dish with the olive oil and add the chicken. Season the chicken with black pepper and then top with the broccoli.
- Bake uncovered for 30-40 minutes or until the chicken is completely cooked.
- Top the chicken with the bacon and both cheeses. Bake for about 5 minutes or until the cheese is completely melted.
