I've only had churros a few times, and they are super delicious. The best one I ever had was one that had a filling in the middle, now that was a good churro. If you've never had a churro or do not know what they are, they are a pastry dough that is deep fried and then coated in cinnamon sugar. This creates a treat that is crunchy on the outside and soft on the inside.
This concept works with a waffle so well. Waffles are already crispy on the outside and soft on the inside, so all that's left is to coat it in cinnamon sugar. This waffle is a great way to enjoy the flavor of a churro.
Churro Waffles
Ingredients:
- 2 cups all purpose flour
- 4 teaspoon baking powder
- 2 tablespoons granulated sugar
- 3 shakes ground cinnamon
- 2 eggs
- 1 1/2 cups warm milk
- 1/3 cup unsalted butter, melted

1 teaspoon
vanilla extract
Topping
- 1 cup granulated sugar
- 1/2 cup ground cinnamon
- 1/2 cup unsalted butter, melted
Waffles
Directions:
- Preheat your waffle iron.
- In a large bowl whisk together the flour, baking soda, sugar and cinnamon.
- In a separate bowl, whisk together the eggs, warm milk, butter and vanilla. Pour the wet ingredients into the dry and stir until everything is well combined.
- Spray your waffle iron with non stick cooking spray. Pour the batter into your waffle iron, per the instructions and then cook until the waffles are golden and crisp.
- While the waffles are cooking melted the butter in a shallow bowl and combine the cinnamon and sugar in another shallow bowl.
- As soon as the waffles are done dip them quickly in the melted butter, then coat both sides with the cinnamon sugar mixture.
- Serve with maple syrup if desired.
