Lately the weather in my new state has been chilly in the mornings. I am talking about mid to low 50's. I waited all winter long for warmer weather for my morning runs and I did get it for a while, but for some reason the past week has been chilly in the morning. So a breakfast that incorporates tropical flavors and makes me dream of warm runs is just what I need, well that and a hot cup of coffee.
Piña Colada Overnight Oats
Ingredients:
- 1/2 cup old fashioned oats
- 1/2 cup milk
- 1/4 cup vanilla greek yogurt
- 1/4 cup pineapple tidbit
- 1 tablespoon shredded coconut
- 2 tablespoons sliced almonds
Directions:
- In a mason jar or resealable container add in the oats and the milk. Then add in greek yogurt, pineapple and coconut.
- Seal container and refrigerate overnight.
- In the morning add in the almonds and stir everything together.
