Holy smokes was this chicken oh so very good. I absolutely loved every single bite of this chicken. It had such a good spiciness to it. If you do not want has much spice, remove the seeds and membranes from the jalapeño.
Jalapeño Lemon Chicken
Ingredients:
- 1 jalapeño, roughly chopped
- 3 tablespoons lemon juice, about 1 lemon
- 1 tablespoon dried oregano
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 3 boneless skinless chicken breasts
Directions:
- In a food processor add the jalapeño, lemon juice, oregano, olive oil and minced garlic. Pulse until the jalapeño is finely diced. Pour the mixture into a ziploc bag or resealable container and then add the chicken. Coat the chicken in the marinade, seal the bag or container and refrigerate overnight.
- Remove the chicken from the marinade and cook your preferred way, coating in any marinade left in the bag or container.
