Seasoned chicken breasts are covered in a sweet and spicy raspberry chipotle sauce. When cooking the chicken breast you can cook them your preferred way. I cooked them in a skillet, but you could use the oven or a grill. Just don't forget to season them with black pepper first.
Raspberry Chipotle Chicken
Ingredients:
- 4 boneless skinless chicken breasts
- ground black pepper, to taste
- 1 cup seedless raspberry jam
- 1/2-1 tablespoon pureed chipotle peppers in adobo sauce, depending on how spicy you want it
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
Directions:
- Season both sides of the chicken breasts with black pepper and cook your preferred way until completely cooked.
- While the chicken is cooking, add the jam, pureed chipotle peppers, apple cider vinegar, garlic powder and onion powder to a small saucepan and stir to combine. Bring the mixture to a boil, stirring occasionally, and then remove from the heat.
- Serve the sauce over the cooked chicken breasts.
