My girls love the new Berry Burst Cherrios and they did not want me to use them for these cereal bars. But after one bite they fell in love with these bars and were glad I used the Berry Burst Cherrios instead of the "plain cherrios" they wanted me to use.
No Bake Cereal Bars
Ingredients:
- 1/2 cup honey
- 1/4 cup peanut butter
- 3 cups Berry Burst Cherrios
- 1 cup white chocolate chips, divided
- 1/2 cup toasted almonds, chopped
- 1/2 cup dried cranberries
- 1 teaspoons shortening
Directions:
- Line an 8x8 baking dish with parchment paper, allowing it to over hang the baking dish.
- In a small bowl add the honey and peanut butter. Microwave for 30-45 seconds, stirring every 15 seconds until melted and completely mixed. Set aside.
- In a large bowl combine the cereal, 1/2 cup chocolate chips, chopped almonds and dried cranberries. Pour the honey mixture over top and stir until well mixed. Pour the mixture into the prepared baking dish and press into an even layer. Freeze for 30 minutes, or until the mixture has hardened enough to be cut.
- In a small bowl combine the remaining 3/4 cup chocolate chips and shortening. Microwave 15 seconds at a time, until melted, stirring well after each 15 second increment.
- Use the overhang of the parchment paper to lift out the cereal and then cut into 8 bars. Dip the bottom of the bars into the melted chocolate and place on the parchment paper. Freeze for an additional 15 minutes or until the chocolate has hardened. Store in an air tight container in the refrigerator.
