Green Bean and Egg Salad with Garlic Parmesan Vinaigrette: Savory Sweet and Satisfying

I do not think I have ever had green beans in a salad, with lettuce. I've had green beans and hard boiled eggs, plus a few other ingredients and I've had hard boiled eggs in a salad. So I was intrigued with both green beans and hard boiled eggs combined with lettuce and a few other ingredients.

Turns out it was delicious! This salad was not only full of yummy ingredients, but was topped with a delicious homemade dressing.

Green Bean and Egg Salad with Garlic Parmesan Vinaigrette

Ingredients:

    Salad

  • 1 pound spring mix lettuce
  • 1/2 pound fresh green beans, trimmed
  • 6 hard boiled eggs, sliced
  • 6 slices bacon, cooked and crumbled
  • 1 small red onion, thinly sliced
  • 1 cup croutons
  • Garlic Parmesan Vinaigrette

  • 1/4 cup grated Parmesan cheese
  • 3 tablespoons olive oil
  • 2 tablespoons white vinegar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • fresh ground black pepper, to taste

Directions:

    Salad

  1. Place the lettuce mix into a large salad bowl.
  2. Bring a large pot of water to a rapid boil. Add in the green beans and cook for 3 minutes. Remove from the heat and drain. Rinse with cold water for at least 1 minute or until the green beans are cold.
  3. Top the lettuce with the green beans, sliced eggs, crumbled bacon, sliced onions and croutons.

    Garlic Parmesan Vinaigrette

  1. In a small bowl, whisking together the Parmesan cheese, olive oil, vinegar, lemon juice, Dijon mustard, garlic and black pepper. If you want a thinner dressing whisk in 1-2 tablespoon water.
  2. Add the dressing to the salad and toss to combine.
Enjoy!!!

Notes:
I used turkey bacon.

You could use extra virgin olive oil instead of regular olive oil.

If you think there will be leftover salad, add the dressing  to individual servings or the ingredients will get soggy sitting in the refrigerator with the dressing mixed in.
