I have now made this breakfast several times and I love how easy it is to prepare. The majority of the work is done the night before and it just sits in the fridge until the morning when you are ready to bake it. Less time spent in the kitchen in the morning preparing breakfast makes me happy. Plus it has delicious bacon throughout this french toast.
French Toast Casserole
Ingredients:
- 1 loaf french bread, cut into 1 inch cubes
- 8 eggs
- 3 cups half and half
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 12 slices bacon, cooked and crumbled
- 3 tablespoons granulated sugar
- 2 teaspoons ground cinnamon
- 2 tablespoons butter, cubed
- maple syrup

Directions:
- Spray a 9x13 baking dish with cooking spray.
- In a large bowl whisk together the eggs, half and half, sugar and vanilla extract. Add in the cubed bread and stir to coat. Add in the cooked and crumbled bacon and stir to mix.
- Pour the bread mixture into the prepared baking dish. Cover the baking dish with aluminum foil and refrigerate overnight.
- The next morning, preheat the oven to 350º F. Remove the baking dish from the refrigerator, uncover and stir the mixture.
- In a small bowl combine the granulated sugar and cinnamon until well mixed. Sprinkle this mixture over top of the french toast casserole. Place the cubed butter in various spots on top of the casserole. Cover the baking dish with foil and bake for 45-50 minutes or until an inserted knife in the center comes out clean. Serve with maple syrup.
