I have never tried a berry that I did not like. Berries are by far my favorite fruit, but tend to be so expensive. That is why I rely on frozen berries. They keep longer than fresh and work well in most recipes in place of fresh berries. Plus with a recipe like this, you do not have to thaw them first.
Raspberry Hot Chocolate
Ingredients
- 12 ounces frozen raspberries
- 1/2 cup granulated sugar
- 1/4 cup water
- 1 1/2 cups milk
- 1/4 cup unsweetened cocoa powder
- 2 tablespoons powdered sugar
- whipped cream
Cooking Directions
- In a medium saucepan, combine the frozen raspberries, sugar and water. Bring the mixture to a boil and cook, stirring occasionally, until the raspberries have cooked down and the mixture has thickened. Remove the mixture from the heat and strain through a mesh strainer to remove the seeds. Discard the seeds.
- Rinse out the saucepan to remove and stray seeds left behind and add the milk. Heat the milk over medium heat until hot, but not boiling. Whisk in the cocoa powder, powdered sugar and strained raspberry purée. Whisk until well combined and then serve. Top the hot chocolate with whipped cream.
