Recently my husband requested a dinner of "spaghetti and meatballs with possibly some garlic bread". So I set out looking at my recipes and much to my surprise I realized I did not have a garlic bread recipe. Well, I fixed that really quick with this super easy and super delicious cheesy garlic bread.
Cheesy Garlic Bread
Ingredients:
- 1- 14 ounce loaf French or Italian Bread
- 1/4 cup unsalted butter, softened
- 2 tablespoons olive oil
- 1 tablespoon minced garlic
- black pepper, to taste
- 1 1/4 cups shredded mozzarella cheese
- 1/3 cup shredded parmesan cheese
- 1 teaspoon dried parsley
- Preheat oven to 400º F. Cut two sheets of foil, about 24 inches long and place them on a baking sheet, overlapping slightly.
- Cut the bread in half lengthwise and place, cut side up on the prepared baking sheet.
- In a small mixing bowl, whisk together the butter, olive oil, garlic and black pepper. Using a spoon, spread the mixture evenly over both halves of the bread, making sure to coat the edges as well.
- Wrap the foil over the bread and roll the edges of the foil together, making sure to roll up the ends of the foil as well. Bake for 10 minutes.
- Remove the bread from the oven and carefully open the foil, rolling the foil inward and down towards the baking sheet. Sprinkle both cheeses evenly over both slices of bread and then sprinkle with dried parsley.
- Bake uncovered for 5-6 minutes, or until the cheese has melted. For crisper bread and a more golden cheese broil the bread during the last 1-2 minutes of the cooking time (you do not need to move the rack up). Slice and serve.
