When the weather is cold outside there is nothing better than a bowl of warm soup. Lately the weather here has been a little crazy. I plan a soup for lunch and the weather is 60º F outside then the very next day it is in the 30's. Even though we ate this soup on a warm day it still hit the spot and the family enjoyed it, plus I got to enjoy the leftovers the next day when it was cold outside.
This soup is made all in one pot and is loaded with cheese, chicken, pasta and tomatoes, and it has a little spicy kick.
Cheesy Chicken Soup
Ingredients:
- 1/2 cup diced yellow onion
- 2 tablespoons olive oil
- 2 tablespoons all purpose flour
- 4 cups low sodium chicken broth
- 14 ounces canned diced tomatoes and green chilies
- 1 cup cooked shredded chicken
- 1 cup uncooked small pasta noodles
- 1 1/4 cups milk
- 1 1/2 cups shredded sharp cheddar cheese
- black pepper, to taste
- In a large pot, over medium heat, heat the olive oil. Add in the onions and sauté until the onions have softened, about 3-4 minutes.
- Sprinkle the flour over the onions and stir constantly, cooking for 2 minutes.
- Slowly whisk in the chicken broth and continue to whisk until the flour has all been incorporated.
- Stir in the tomatoes and shredded chicken. Bring the mixture to a boil and then add in the pasta. Bring the mixture to a boil again, reduce the heat to a simmer and simmer for about 10 minutes or until the noodles are cooked to al dente.
- Add in the milk and the cheese and stir until the cheese has melted and is completely incorporated. Season with black pepper.
Notes:
If you do not prefer spicy foods you can use a can of regular diced tomatoes.
You can use any small pasta, like shell or elbow.
