Taco Salad Casserole

Taco Salad Casserole: Savory Sweet and Satisfying

Taco salad is a favorite of mine in the summer time. It is easy to put together making it perfect for a busy night. Plus it tastes delicious. So when I saw a recipe for a taco salad casserole, I knew I needed to make it sometime during the colder months when I am not wanting salads. This way I can enjoy the flavors of taco salad but in a casserole.

Taco Salad Casserole

Ingredients:

  • 1 pound ground turkey
  • 1/4 yellow onion, diced
  • 1/4 green pepper, diced
  • 1/2 cup water
  • 1 package taco seasoning
  • 1 cup crushed Doritios
  • 16 ounces refried beans
  • 1 cup cheddar cheese
  • Toppings

  • shredded lettuce
  • diced tomatoes
  • sliced black olives
  • sour cream
  • salsa or taco sauce

Directions:

  1. In a large skillet, over medium heat, cook the ground turkey, diced onion and diced pepper until the meat is browned and crumbled, stirring occasionally.
  2. Meanwhile, spread the crushed Doritios into the bottom of a lightly greased 8x8 inch baking dish.
  3. Heat the refried beans in a microwaveable bowl, for about 60 seconds or until they are warmed through. Place small spoonfuls of the beans on top of the Doritios and gently spread.
  4. When the meat mixture is done, drain if needed and return to the stove.
  5. Add the water and the taco seasoning to the meat mixture and stir until completely combined.
  6. Bring the mixture to a boil, reduce the heat and let simmer until the mixture has thickened. Pour the mixture over top of the refried beans.
  7. Sprinkle the cheese over top and broil for 2-4 minutes, or until the cheese has melted. Top with some or all of the additional toppings, or toppings of your choice.
