Taco salad is a favorite of mine in the summer time. It is easy to put together making it perfect for a busy night. Plus it tastes delicious. So when I saw a recipe for a taco salad casserole, I knew I needed to make it sometime during the colder months when I am not wanting salads. This way I can enjoy the flavors of taco salad but in a casserole.
Taco Salad Casserole
Ingredients:
- 1 pound ground turkey
- 1/4 yellow onion, diced
- 1/4 green pepper, diced
- 1/2 cup water
- 1 package taco seasoning
- 1 cup crushed Doritios
- 16 ounces refried beans
- 1 cup cheddar cheese
- shredded lettuce
- diced tomatoes
- sliced black olives
- sour cream
- salsa or taco sauce
Toppings
Directions:
- In a large skillet, over medium heat, cook the ground turkey, diced onion and diced pepper until the meat is browned and crumbled, stirring occasionally.
- Meanwhile, spread the crushed Doritios into the bottom of a lightly greased 8x8 inch baking dish.
- Heat the refried beans in a microwaveable bowl, for about 60 seconds or until they are warmed through. Place small spoonfuls of the beans on top of the Doritios and gently spread.
- When the meat mixture is done, drain if needed and return to the stove.
- Add the water and the taco seasoning to the meat mixture and stir until completely combined.
- Bring the mixture to a boil, reduce the heat and let simmer until the mixture has thickened. Pour the mixture over top of the refried beans.
- Sprinkle the cheese over top and broil for 2-4 minutes, or until the cheese has melted. Top with some or all of the additional toppings, or toppings of your choice.
