Tuna Pasta Salad with Olives
Ingredients:
- 16 ounces rotini pasta
- 4 cups halved grape tomatoes
- 4- 6 ounce cans tuna fish, drained
- 1 cup sliced green olives
- 2 clove garlic, minced
- 2 lemons, zest
- 1/3 cup olive oil or extra virgin olive oil
- 1/4 cup water
- ground black pepper, to taste
Tuna Pasta Salad
Lemon Garlic Vinaigrette Dressing
Directions:
- Cook the pasta according to the package directions. Drain and rinse with cold water. Set aside and let cool, about 5 minutes.
- Transfer the pasta to a large bowl. To the pasta add the tomatoes, tuna fish and green olives. Toss gently to mix.
- In a medium bowl whisk together the the garlic, lemon zest, lemon juice, olive oil, water and black pepper. Continue to whisk until throughly combined.
- Pour the dressing over the pasta salad and toss to coat.
