Dill Pickle Pasta Salad: Savory Sweet and Satisfying

I kept on seeing posts for this salad on Pinterest and Facebook and every time I saw it I would say to my self, I really need to make that it looks really good and sounds like something my family would really love.

Holy cannoli! This salad was amazing! Absolutely delicious! I am so glad that I made it sooner than later. Next time I make it will without a doubt be doubling it, because it did not last long in our house.

Dill Pickle Pasta Salad

Ingredients:
  • 1/2 pound uncooked shell pasta
  • 3/4 cup sliced baby dill pickles
  • 2/3 cup diced cheddar cheese
  • 1/2 cup pickle juice, from the jar
  • 2/3 cup light mayonnaise
  • 1/3 cup light sour cream
  • 1/8 teaspoon cayenne pepper
  • 4 tablespoons pickle juice
  • black pepper, to taste
Directions:
  1. Cook the pasta according to package directions, drain and rinse with cold water.
  2. In a medium bowl combine the pasta with 1/2 cup pickle and let sit for about 5 minutes. Drain and discard the pickle juice.
  3. In a small bowl combine the mayonnaise, sour cream, cayenne pepper, 4 tablespoons pickle juice and black pepper.
  4. In a large bowl combine the pasta, sliced pickles, cheddar cheese and dressing.
  5. Refrigerate for at least 1 hour before serving.
