I really enjoy finding salads that use ingredients that I would have not thought about putting in a salad. I enjoy them even more when they have a unique homemade dressing with them.
This salad has all of the things that intrigue me with new salads. A homemade cranberry dressing on top of a salad packed with ingredients. With this salad it is the apples I would have not thought about including with all of the other ingredients, but they work and add a nice crunch to the salad.
For the apples you can use any kind you would like. I used granny smith, because they are my favorite and thought the tartness of them would blend with the tartness of the cranberry dressing.
Cranberry Apple Salad
Ingredients:
- 14 ounce can whole berry cranberry sauce
- 1/3 cup red wine vinegar
- 1/4 cup honey
- 1/2 cup olive oil
- 2 romaine lettuce hearts, chopped
- 1 cup thinly sliced carrots
- 3/4 cup dried cranberries
- 1/4 cup raisins
- 1/4 cup golden raisins
- 1/2 cup chopped walnuts or pecans
- 1/4 cup sunflower seeds
- 2 cups diced apples
- 4 ounces queso fresco, crumbled
Dressing
Salad
Directions:
- Place all of the dressing ingredients in a blender and pulse until smooth and combined. Refrigerate until needed.
- In a large bowl toss together the lettuce, carrots, cranberries, both raisins, nuts, sunflower seeds, apples and cheese.
- Cover and refrigerate until ready to serve. Top each serving with desired amount of salad dressing.
