Typically when I am posting a recipe I like to post everything needed to make that recipe in one post. When I came across a recipe for fish tacos, it included a link to this slaw to go with the tacos. I thought about cutting down this recipe to make it work with the tacos and not have any leftovers. But for several reasons I decided to just make this recipe as is and include it with the tacos making a note that it would make more than needed for the tacos.
When I finished making this slaw my husband commented on how much he likes slaw and snitched a bite. He then said it was really good, he could eat it by itself. Good I said cause there will be plenty leftover. So I then determined to make it a separate post since you do not have to eat on the fish tacos. Mexican Slaw with Cumin Lime Dressing
Ingredients:
- 4 cups sliced purple cabbage
- 1 cup sliced jicama
- 1 cup grated carrots
- 1/2 cup red bell pepper, sliced into thin strips
- 1/2 cup yellow bell pepper, sliced into thin strips
- 4 green onions, thinly sliced
- 1 small jalapeño, finely diced
- 1/2 cup fresh chopped cilantro
- 3/4 teaspoon cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon chili powder
- 1 tablespoon honey
- 1/3 cup fresh lime juice
- 3 tablespoons olive oil
- fresh ground black pepper, to taste
Mexican Slaw
Cumin Lime Dressing
Directions:
- Add all of the Mexican slaw ingredients to a large bowl and mix.
- In a small bowl combine the cumin, coriander and chili powder.
- Whisk in the honey and lime juice.
- Then whisk in the olive oil. Season with black pepper.
- Mix the slaw and dressing together, right before serving.
