If you love easy side dishes, then this recipe is for you. When I say easy I really mean easy, just dump everything into a pot and heat, stirring until the cheese is melted.
Creamy Black Bean and Corn
Ingredients:
- 30 ounces frozen corn
- 1 stick unsalted butter
- 8 ounces cream cheese
- 4 ounce can diced jalapeños
- 15 ounce can black beans, rinsed and drained
Directions:
- Place all of the ingredients into a pot and heat over medium low heat.
- Stir often until everything is warmed through and the cream cheese is melted and completely incorporated.
Enjoy!!!
Notes:
If you are a few ounces too short or have a few too many ounces of corn it is okay.
If spicy foods are not your thing leave out the jalapeños.
