I love a good salad, especially when the weather starts to warm up. Even though I love it when the weather starts to warm up and especially when it gets hot, I am not the biggest fan of standing over a hot stove or having the oven on for long periods of time. So salads are perfect for this time of year. Even though I still had to cook the chicken, it did not require me to stand over the stove stirring or mixing. I could get the chicken going and walk away to work on the rest of the salad.
Strawberry Blueberry Chicken Salad with Orange Vinaigrette
Ingredients:
- 2 oranges, juiced
- 1 lime, juiced
- 1/3 cup extra virgin olive oil
- 3 boneless skinless chicken breasts
- 2 tablespoons olive oil
- 1/2 teaspoon black pepper
- 1 pound romaine lettuce, washed, dried, and chopped
- 1 pound strawberries, sliced
- 12 ounces blueberries
- 15 ounce can mandarin oranges, drained
- 1 cup almonds
- 12 ounce package queso fresco, crumbled

Directions:
- In a medium bowl whisk all of the orange vinaigrette ingredients very well and set aside.
- In a large skillet heat the olive oil over medium heat.
- Add in the chicken and pour 1/4 cup of the orange vinaigrette over top. Cook for about 8 minutes, then turn the chicken over and cook until completely done.
- Remove the chicken from the pan and allow to rest for 10 minutes.
- While the chicken is resting, add the lettuce to a big bowl.
- Top with strawberries, blueberries, oranges, almonds and queso fresco.
- Cut the chicken into bite sized pieces and place on the salad.
- Gently toss the salad to combine.
- Serve with the remaining orange vinaigrette.
