I am very cautious about making desserts with mint in them. They tend to turn out one of two ways for me, either tasting delicious or tasting like toothpaste. But since I like mint chocolate chip ice cream I decided to give these cookies a try.
Thankfully these cookies tasted delicious and not at all like toothpaste. The mint flavor was subtle and not overpowering, but enough for you to know it was a mint cookie.
Mint Chocolate Chip Cookies
Ingredients:
- 1/2 cup unsalted butter, room temperature
- 3/4 cup granulated sugar
- 1 egg
- 3/4 teaspoon peppermint extract
- 3-4 drops green food coloring
- 1 1/2 cups all purpose flour
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cream of tarter
- 1 cup chocolate chips
Directions:
- Preheat the oven to 350º F. Line two large baking sheet with slipats.
- In a large bowl cream the butter and sugar together. Add in the egg, peppermint extract and food coloring. Mix until well combined and the color is consistent throughout.
- Add in the flour, baking soda, baking powder and cream of tarter. Mix just until everything is combined.
- Fold in the chocolate chips by hand.
- Scoop out small balls of dough and roll into a ball and place on prepared baking sheet.
- Bake for 10 minutes. Let the cookies cool on the baking sheet for 2 minutes and then transfer to a cooling rack to finish cooling.
