Tater tots meet the flavors of a jalapeño popper in the most delicious casserole ever. I had a strong feeling that this casserole was going to be pretty good. How could tater tots topped with a cheese and jalapeño mixture then topped with bacon not be good! But what I did not anticipate was just how amazingly delicious it would be. Even the leftovers were just as delicious as the day I made it.
Jalapeño Popper Tater Tot Casserole
Ingredients:
- 2- 8 ounce packages reduced fat cream cheese, room temperature
- 1 cup light sour cream
- 2 cups shredded cheddar jack cheese, divided
- 12 ounces turkey bacon
- 6 jalapeño peppers, seeded and diced
- 32 ounces frozen tater tots
- 6 green onions, sliced
Directions:
- Preheat the oven to 425º F.
- Line a 9x13 baking dish with the frozen tater tots and bake for 15 minutes after the oven has preheated.
- Meanwhile, cook the bacon until crisp and then crumble.
- In a large bowl combine the cream cheese, sour cream, 1 1/2 cups shredded cheese, 2/3 of the bacon, diced jalapeños, 2/3 of the green onions. Mix until well combined.
- Spread the cheese and jalapeño mixture over the tater tots. Sprinkle the remaining 1/2 cup shredded cheese on top. Sprinkle the remaining bacon and green onions on top.
- Bake at 425º F for 20 minutes.
