Breakfast Sushi

Breakfast Sushi: Savory Sweet and Satisfying

I originally saw a video on how to make this and that prompted me to find a recipe with some directions. My first attempt turned out delicious but not so pretty. The filling was leaking out everywhere when I rolled it and it was hard to roll because of all the filling. Since it was so delicious I knew I needed to take another attempt at it. The second time I made two bacon weaves instead of one and divided the filling between the two. It turned out perfect, well worth the work!

Breakfast Sushi

Ingredients:

  • 20 slices turkey bacon
  • 2 cups frozen tater tots, thawed
  • 1 jalapeño pepper, seeded and finely diced
  • 2 eggs
  • 1 1/2 cups shredded cheddar cheese
  • toothpicks

Directions:

  1. Preheat oven to 375º F. Spray a large baking sheet with cooking spray or two smaller ones.
  2. Using 10 pieces of raw bacon weave the bacon together on the prepared baking sheet. See the second and third pictures for help with this. Repeat this process with the remaining 10 pieces of bacon. You will have 2 separate bacon weaves.
  3. On one end of each bacon weave run some toothpicks over and under to help secure the bacon weave, look at the fourth picture for a close up of this. If you have skewers, longer toothpicks, these would work great.
  4. Place the tater tots in a large bowl and break them up with a fork.
  5. Add in the diced jalapeño and eggs. mix well with the fork, see the fifth picture.
  6. Divide the mixture between the two bacon weaves leaving a small border on 3 of the sides and a slightly bigger border on one of the shorter sides (about 2 inches), see the sixth picture. Divide the cheese between the two bacon weaves and sprinkle on top of the tater to mixture, see the seventh picture.
  7. Starting at the short end without the 2 inch border, roll up the the bacon weave, trying to roll as tightly as possible. Make sure the seam side in down on the baking sheet.
  8. Bake for 45 minutes or until the bacon is completely cooked and crispy. Remove toothpicks and slice with a sharp knife.
