Potato salad with bacon is nothing new, but potato salad with sriracha is. The combination of potato salad with srircha and of course bacon is super delicious. You can change how spicy this salad is by reducing the amount of sriracha or increasing it for more of a kick.
Bacon Sriracha Potato Salad
Ingredients:
- 3 pounds red potatoes
- 4 slices turkey bacon
- 2 1/2 tablespoons white vinegar
- 3/4 cup mayonnaise
- 1/4 cup sour cream
- 1 1/2 tablespoons sriracha sauce
- 1/4 cup chopped green onions
- paprika, to taste
- Rinse the potatoes and cut into 3/4 inch cubes.
- Place the potatoes into a large pot and cover with water until about 1 inch above the potatoes. Place on stove and turn heat to high. Bring the water to a boil.
- Reduce the heat to low and simmer, stirring occasionally for about 8 minutes or until the potatoes are fork tender.
- Drain the potatoes and transfer them to a large bowl and gently stir in the vinegar. Let the potatoes cool for about 15 minutes.
- While the potatoes are cooking, cook the bacon your desired way.
- In a small bowl combine the mayonnaise, sour cream and sriracha sauce.
- Once the potatoes have cooled a bit fold in the mayonnaise and sriracha sauce. Crumble the bacon over top and sprinkle with green onions and paprika.
