A delicious oatmeal chocolate chip cookie gets a new delicious flavor added, cherry. Adding some chopped maraschino cherries to an already delicious cookie makes them even better. I do not think I want a plain chocolate chip oatmeal cookie anymore, only a cherry chocolate chip cookie.
Cherry Chocolate Chip Cookies
Ingredients:
- 3/4 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 egg
- 1 1/2 teaspoons cherry juice, from the jar of maraschino cherries
- 2 teaspoon cornstarch
- 1/2 teaspoon baking soda
- 1 3/4 cup all purpose flour
- 1 cup quick oats
- 3/4 cup mini chocolate chips
- 1- 10 ounce jar maraschino cherries, drained (but save the juice) and diced
Directions:
- Preheat the oven to 375º F.
- In the bowl of a stand mixer cream together the butter and both sugars until well mixed.
- Add in the egg and cherry juice and mix until well mixed.
- In a large bowl whisk together the cornstarch, baking soda, flour and oats.
- With the mixer running slowly add in the flour to the creamed butter.
- Add in the chocolate chips and chopped cherries. Mix with a spoon not the mixer, just until evenly incorporated.
- Using a cookie scoop or a measuring spoon, scoop out the dough and roll into 36 dough balls. Place the cookies on an ungreased baking sheet and bake for 9 minutes.
- Remove the baking sheets from the oven and let the cookies rest on the hot baking sheet for 2 minutes, then remove the cookies to a cooling rack and let cool completely.
