My family really enjoyed this mashed potato dish. It was flavorful and different than "normal" mashed potatoes.
Mashed Potato Crunch
Ingredients:
- 2.5 pounds russet potatoes
- 4 tablespoons unsalted butter
- 1/2 cup milk
- 1/4 teaspoon ground black pepper
- 1 1/2 cups shredded sharp cheddar cheese
- olive oil
- 4 slices turkey bacon, cooked and crumbled
- 2 green onions, chopped
- sour cream
Directions:
- Preheat oven to 400º F. Grease a 15x10 inch (or other similar sized) non stick baking sheet with sides with olive oil. Be sure to spread the olive oil on the sides as well.
- Peel and cube the potatoes. Place the potatoes in a large pot and cover with water. Bring to a boil and simmer for about 20 minutes or until fork tender.
- Drain and add the potatoes back to the pot with heat set to medium to cook off the excess water. Stir the potatoes for 2 minutes then remove from the heat.
- Add in the butter, milk and black pepper. Mash the potatoes. Stir in 3/4 cup cheddar cheese.
- Spoon the potatoes into the prepared baking sheet and spread into an even layer covering the entire pan.
- Sprinkle the remaining 3/4 cup shredded cheese on top.
- Bake for 45-50 minutes or until the bottom and edges are browned and crispy. Sprinkle with bacon and green onions.
- Cut into squares and serve with sour cream, if desired.
