When I decided to make these I had no idea of what a crinkle cookie was. I made them because they had cranberries in them. After trying them I discovered that the top is slightly crunchy, but the middle is still a little soft. A very yummy cookie.
Cranberry Orange Crinkle Cookies
Ingredients:
- 1/2 cup unsalted butter, room temperature
- 1 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1 egg
- 1 orange zested
- 1 tablespoon fresh squeezed orange juice
- 1/4 teaspoon baking powder
- 1/8 teaspoon baking soda
- 1 1/2 cups all purpose flour
- 2/3 cup chopped fresh cranberries
- 1/2 cup powdered sugar
Directions:
- Preheat oven to 350º F. Grease several cookie sheets and set aside.
- In a large bowl cream together the butter and sugar until light and fluffy. Beat in vanilla, egg, orange zest and orange juice.
- In a medium bowl combine the baking powder, baking soda and flour. Add to the wet ingredients and mix just until combined.
- Stir in the chopped cranberries.
- Scoop out a tablespoon of dough and roll into a ball. Roll the ball in the powdered sugar and place on prepared baking sheet about 2 inches apart.
- Bake for 7-11 minutes or until the bottoms just barley start to brown and the tops look matte (not melty or shiny).
- Cool cookies on baking sheet for about 3 minutes and then transfer to a cooling rack.
Yields: approximately 2 dozen cookies
