Mashed Potatoes with Pepper Jack Cheese and Garlic: Savory Sweet and Satisfying

These mashed potatoes require a bit more planning and work than normal mashed potatoes, because you have roast the garlic. But it is worth it and they are not overly garlicky or spicy, just the perfect amount.

Mashed Potatoes with Pepper Jack Cheese and Garlic

Ingredients:

  • 10 cloves garlic, unpeeled
  • 3 1/2 pounds russet potatoes, peeled and cut into 2 inch pieces
  • 2 tablespoons olive oil
  • 1/4 cup unsalted butter, room temperature
  • 1 cup pepper jack cheese
  • 3/4 cup light sour cream

Directions:

  1. Preheat oven to 350º F.
  2. Wrap garlic in foil and roast for about 1 hour.
  3. Unwrap and peel garlic. Place garlic in a bowl and mash with a fork.
  4. Place potatoes in a large pot and cover with water.
  5. Bring to a boil and cook until potatoes are tender about 25 minutes.
  6. Drain potatoes and return to pot and mash. Add in butter, cheese and sour cream. Stir until everything is combined.
