Cheesy Smashed Potatoes

Cheesy Smashed Potatoes: Savory Sweet and Satisfying

These mashed potatoes are deliciously easy. I also enjoy that the skins are left on the potatoes, since that is where a good portion of the potatoes nutrients are.

Cheesy Smashed Potatoes

Ingredients:

  • 5 pounds yukon gold potatoes
  • 1 cup light sour cream
  • 3 cups shredded sharp white cheddar cheese
  • 1/4 cup chopped green onions
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon cayenne pepper

Directions:

  1. Rinse potatoes and cut each potato into 4 pieces.
  2. Place potatoes into a large pot and cover with water.
  3. Bring to a boil and boil for 15 minutes or until potatoes are tender.
  4. Drain potatoes and return to pot. Smash potatoes.
  5. Add in sour cream and cheese, stir until cheese is melted and everything is combined.
  6. Add in green onions, nutmeg, and cayenne, stirring to mix.
