Barbecue Chicken Pasta

Barbecue Chicken Pasta: Savory Sweet and Satisfying

This dish is a one pot meal. So from start to finish all you need is one pot plus a few utensils. Another nice thing about this dish that it will be ready to eat in just about 35 minutes. This is definitely my kind of dish. It does not take a long time to prepare and cook, plus it does not create a lot of dirty dishes. Oh and I should probably mention it tastes very delicious.

Barbecue Chicken Pasta

Ingredients:

  • 4 slices turkey bacon, diced
  • 1 boneless skinless chicken breast, cut into 1 inch pieces
  • 2 cloves garlic, minced
  • 1 medium yellow onion, diced
  • 2 cups low sodium chicken broth
  • 14.5 ounce can no salt added diced tomatoes
  • 1/2 cup milk
  • 1/4 teaspoon crushed red pepper flakes
  • 3 cups rotini pasta
  • black pepper, to taste
  • 1/2 cup barbecue sauce
  • 1 cup shredded cheddar cheese

Directions:

  1. In a large pot, over medium high heat, cook the bacon until crispy, about 6-8 minutes. Remove bacon and reserve 1 tablespoon fat and drain the rest. If you do not have 1 tablespoon of fat add some canola oil to equal 1 tablespoon.
  2. Add in the chicken and cook until golden on both sides, about 2-3 minutes.
  3. Add in the garlic and onions. Cook, stirring often, until onions are tender, about 3-4 minutes.
  4. Add in the chicken broth, diced tomatoes, milk red pepper flakes, pasta and black pepper, stirring to mix. Bring the mixture to a boil, cover and reduce heat to low.
  5. Simmer until the pasta is cooked, about 13-16 minutes.
  6. Stir in the barbecue sauce, cheese and bacon. Cook until cheese is melted and everything is heated, about 1-2 minutes.
