Upside Down Pineapple Pancakes: Savory Sweet and Satisfying

If you like pineapple than these pancakes are for you. Each pancake has a pineapple ring and a maraschino cherry bake right in it. Then the pancakes are topped with a homemade pineapple curd and another cherry. A pretty delicious way to start the day.

Upside Down Pineapple Pancakes

Ingredients:

  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1 egg
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon vanilla extract
  • 4 tablespoon unsalted butter, melted
  • 1 1/3 cups buttermilk
  • 1- 20 ounce can pineapple rings in juice, drained and juice reserved
  • maraschino cherries

Pineapple Curd

  • 3 large egg yolks
  • 2 tablespoons granulated sugar
  • 1 1/2 tablespoons cornstarch
  • 1 cup reserved pineapple juice
  • 2 tablespoon lemon juice
  • 2 tablespoons unsalted butter

Cooking Directions

Pineapple Curd

  1. In a medium saucepan, whisk together the egg yolks, sugar and cornstarch. Whisk in the pineapple juice and lemon juice. Whisk until everything is completely combined.
  2. Place saucepan on stove with heat on medium. Cook, whisking constantly, until the mixture comes to a boil and thickens.
  3. Reduce heat to low and simmer for 1 more minute, whisking constantly.
  4. Remove from heat and add in the butter, whisking until the butter melts. Set aside.

Pineapple Pancakes

  1. In a medium bowl whisk together the flour, baking powder and baking soda.
  2. In a large bowl whisk together the egg, sugar, vanilla, melted butter and buttermilk. Add the dry ingredients to the wet ingredients and mix just until combined, do not over mix. The batter will be thick.
  3. On a preheated griddle place a 1/4 cup full of batter. Cook pancakes for about 2-3 minutes or until bubbles form on top.
  4. Place a pineapple ring in the center of each pancake and then place a maraschino cherry in the middle of each pineapple ring.
  5. Carefully flip over the pancakes and cook on the other side for about 2 minutes or until the pancake is lightly browned and completely cooked.
  6. Top with pineapple curd and another maraschino cherry, if desired.
