My family said that this dish reminded them of macaroni and cheese. I feel it is more like a super cheesy mashed potato dish. You have gnocchi in a creamy cheesy sauce top with more cheese, bacon and green onions.
Loaded Baked Gnocchi
Ingredients:
- 1 pound potato gnocchi
- 2 tablespoons unsalted butter
- 1 clove garlic, finely chopped
- 2 tablespoons all purpose flour
- 1 cup milk
- 1/2 cup light sour cream
- 1 1/2 cups shredded cheddar cheese, divided
- black pepper, to taste
- 2 green onions, chopped
- 3 slices turkey bacon, cooked and crumbled
Directions:
- Preheat oven to 350º F. Spray a 9x9 inch baking dish with cooking spray. Set aside.
- Cook gnocchi according to package directions. Drain and arrange in a single layer on the bottom of prepared baking dish.
- In a medium saucepan, over medium heat, melt the butter. Stir in the garlic and cook until lightly golden, about 1 minute.
- Whisk in the flour until it is completely incorporated into the butter.
- Slowly add in the milk, whisking constantly. Continue to whisk constantly until mixture thickens about 3-5 minutes.
- Add in 1 cup of cheese and stir until completely melted and incorporated.
- Remove from heat and stir in sour cream. Season with black pepper.
- Pour cheese sauce over the gnocchi.
- Sprinkle with remaining cheese, green onions and bacon.
- Bake for 25 minutes or until cheese is melted and dish is bubbly.
- Remove from oven and let sit for 5 minutes.
Notes:
You can easily double this recipe, just use a 9x13 inch baking dish.
