I am sure I have mentioned this before, but I love making homemade snacks for my family. I would much rather make them a snack then buy them a snack. I typically look for snacks that do not require a lot of work and come together easily. Plus it has to taste good. This snack meets all of those requirements and the cheerios add a nice crunch to it.
Cheerios Snack Bites
Ingredients:
- 3 cups Honey-Nut Cheerios
- 1 cup shredded coconut
- 2 tablespoons non fat Greek yogurt
- 2/3 cup creamy peanut butter
- 1/3 cup honey
- 1 cup mini chocolate chips
Directions:
- Place Cheerios into a Ziploc bag and crush them into crumbs, but not a powder. Measure out 2 cups of crushed Cheerios and place into a large bowl.
- To the Cheerios add the coconut, Greek yogurt, peanut butter, honey and mini chocolate chips. Mix until everything is well combined.
- Scoop out about 1 tablespoon of mixture and roll into a ball.
- Place in a container, cover and refrigerate for at least 1 hour.
Notes:
If mixture is to sticky and does not roll into balls well, refrigerate mixture for about 30 minutes and then scoop out and roll into balls. Cover and refrigerate again for at least 1 hour.
