It will sometimes surprise me how such a simple and easy dish can be so delicious. I am not sure why it surprises me, because when the ingredients are all delicious it only makes sense they would create a delicious dish. Plus a dish does not have to be complicated to be good. I have made several complicated dishes that have not turned out nearly this good. Even knowing all that, I will still sometimes get surprised by an easy and simple dish, like this one.
Chili Chicken
Ingredients:
- 6 boneless skinless chicken breasts
- 2- 14.5 ounce can Italian stewed tomatoes
- 2- 15 ounce cans low sodium chili with beans
- sliced or shredded cheddar cheese
Directions:
- Preheat oven to 350º F.
- Place chicken in an ungreased 9x13 baking dish.
- Top with tomatoes and bake for 50 minutes or until chicken is just cooked.
- Spoon chili over top and bake an additional 10 minutes or until chili is heated through and chicken is completely cooked.
- Top with cheese and bake an additional 3-4 minutes or until cheese is melted.
