Not only are these granola bites easy to make but they also make a delicious snack. When I made these, I was sure that I had mini chocolate chips in the pantry. But it turned out I had used them all up in other recipes, so I used regular sized chocolate chips. They worked, but the mini would work better and that is what is noted in the recipe below.
Peanut Butter S'mores Granola Bites
Ingredients:
- 1 1/2 cups quick cook oats
- 1/4 cup whole wheat flour
- 2/3 cup crushed graham crackers
- 1/2 cup creamy peanut butter
- 1/2 cup honey
- 1/2 cup mini marshmallows
- 1/4 cup mini chocolate chips
Directions:
- In a large bowl combine the oats, wheat flour, and crushed graham crackers.
- Add in the peanut butter and honey, stir until well combined.
- Stir in the marshmallows and chocolate chips.
- Refrigerate for 15 minutes.
- Using a small cookie scoop or a rounded tablespoon, scoop out mixture and roll in your hands to form a ball.
- Store in the refrigerator.
