I love deviled eggs and I love things spicy. So it is only natural that I would eventually combined the two.
My husband was a bit skeptical about these eggs. He was expecting "regular" deviled eggs, but he should know by now that once I make something the "normal" or "traditional" way I will try different variations on it. However once he tried it he was glad I made them and wants them again.
Jalapeño Bacon Deviled Eggs
Ingredients:
- 12 large eggs, hard boiled and peeled
- 1 cup light mayonnaise
- 1 1/2 teaspoons rice vinegar
- 3/4 teaspoon ground mustard
- 1/2 teaspoon granulated sugar
- 2 jalapeños, seeded and diced
- 6 slices turkey bacon, cooked and crumbled
- paprika
Directions:
- Cut the hard boiled eggs in half lengthwise. Remove the yolks and place them in a medium bowl. Mash the egg yolks with a fork.
- Add the mayonnaise, vinegar, mustard and sugar to the mashed yolks and stir until well combined. Mix in the jalapeños and bacon.
- Carefully spoon yolk mixture into the holes of the egg whites. Sprinkle with paprika and serve immediately or refrigerator until ready.
