This quiche has a unique hash brown crust instead of a traditional pie crust. A delicious twist to a quiche.
You can switch things up and leave out the peppers if someone doesn't like them like my girls don't or substitute them with diced tomatoes.
Hash Brown Quiche
Ingredients:
- 3 cups frozen shredded hash brown potatoes
- 1/3 cup unsalted butter, melted
- 1 cup cooked diced ham
- 1 cup shredded cheddar cheese
- 1/4 cup diced green pepper
- 2 eggs
- 1/2 cup milk
- 1/4 teaspoon black pepper
- Preheat oven to 425º F.
- Press hash brown between paper towels to remove excess moisture.
- Press into the bottom and up the sides of an un-greased 9 inch pie plate. Drizzle with butter.
- Bake for 25 minutes.
- In a medium bowl combine ham, cheese and green pepper.
- Spoon mixture over baked hash browns.
- In a small bowl whisk eggs, milk and black pepper.
- Pour over ham mixture.
- Reduce oven heat to 350º F and bake for 25-30 minutes or until an inserted knife comes out clean.
- Allow to stand for 10 minutes before cutting.
Notes:
You can substitute 1 cup cooked sausage for ham.
