My husband likes salads but not always as the main dish for dinner, because they typically do not fill him up. However, I have found a large and filling salad for dinner that satisfied my husband. Not only was it large and filling, but it was pretty delicious as well.
Chinese Chicken Salad
Ingredients:
- 2 boneless skinless chicken breasts
- 3 tablespoons low sodium soy sauce
- 2 tablespoons rice wine vinegar
- 2 tablespoons olive oil
- 1 head romaine lettuce, chopped
- 4 cups chopped red cabbage
- 8 ounce bag frozen edamame, thawed and drained
- 2/3 cup shredded carrots
- 1/2 cup chow mein noodles
- 1/4 cup sliced almonds, toasted
- 1/4 cup olive oil
- 3 tablespoons honey
- 2 tablespoons rice wine vinegar
- 1 teaspoon ground ginger
- 1 tablespoon low sodium soy sauce
- 1 clove garlic, minced
- 2 teaspoons sriracha chile sauce
- 1 teaspoon sesame oil
Directions:
- In a large bowl or resealable bag, combine the soy sauce and rice wine vinegar.
- Add in the chicken breasts and coat with sauce. Put chicken in the refrigerator and marinate for at least 15 minutes.
- Heat a medium skillet over medium-high heat and add chicken along with marinade. Cook chicken for 3-5 minutes per side or until chicken is completely cooked.
- Let the chicken rest for a few minutes and then cut into bite sized pieces.
- In a small bowl whisk together all of the dressing ingredients.
- In a large bowl combine the lettuce, cabbage, edamame, carrots, chicken, chow mein noodles and almonds.
- Pour dressing over top and toss to combine.
