I do not care for butter pecan anything. However, just like with my Toasted Butter Pecan Cake I posted a while back, I made this for my dad who's favorite ice cream is butter pecan.
I was surprised with the turn out of this ice cream. Now don't get me wrong this is far from my favorite ice cream, but it is a good ice cream. Very creamy and flavorful. Perfect for any butter pecan lovers out there.
Butter Pecan Ice Cream
Ingredients:
- 6 tablespoons unsalted butter
- 1 cup chopped pecans
- 1 cup half and half
- 1/2 cup light brown sugar
- 2 cups heavy cream
- 1 1/2 teaspoons vanilla extract
Directions:
- Place a mesh sieve over a small bowl and set aside.
- Place freezer safe container, for storing the ice cream, in the freezer.
- In a small saucepan, over low heat, melt butter. Mix in pecans, stirring until pecans start to brown.
- Pour the pecans and butter into the mesh sieve and let the butter drain into the bowl. Set aside and let butter and pecans cool completely.
- In a large bowl combine the half and half and brown sugar, stirring until the sugar is dissolved.
- Stir in the heavy cream, vanilla and cooled butter melted butter.
- Pour mixture into an ice cream maker and churn according to manufacturer's directions. During the last 5 minutes of churning time add the cooled buttered pecans.
- Remove storage container from the freezer and transfer ice cream into it. Cover with lid and freeze.
