Coconut Chicken
Ingredients:
- 4 boneless skinless chicken breasts
- olive oil
- black pepper, to taste
- 1/3 cup bread crumbs
- 1/3 cup flaked coconut
- 1/4 cup unsalted butter, melted
Directions:
- Preheat oven to 350º F. Place a baking rack on a baking sheet and spray with cooing spray.
- In a shallow bowl combine breadcrumbs and coconut.
- Brush both sides of chicken with oil and season with black pepper.
- Coat both sides of chicken in coconut mixture and place on prepared baking rack. Drizzle with melted butter. Bake for 40 minutes or until completely cooked.
