Sweet Potato Casserole with Pineapple and Marshmallows: Savory Sweet and Satisfying

The addition of pineapple to this sweet potato casserole makes it nice and sweet. The marshmallows on top just add to the sweetness and deliciousness of this casserole.

Sweet Potato Casserole with Pineapple and Marshmallows

Ingredients:
  • 6 medium sweet potatoes
  • 8 tablespoons unsalted butter, cubed
  • 3/4 cup granulated sugar
  • 20 ounce can crushed pineapple, drained
  • 2 eggs, beaten
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 10 ounce package marshmallows
Directions:
  1. Place sweet potatoes in a large pot and cover with water. Bring to a boil and boil gently for 30-45 minutes or until the sweet potatoes can easily be pierced with a sharp knife. Drain the sweet potatoes an cool slightly.
  2. Preheat oven to 350º F. Spray a 9x13 baking dish with cooking spray and set aside.
  3. Peel the skin off of the potatoes and discard. Place the sweet potatoes in a large bowl and mash.
  4. Stir in the butter and sugar until the butter is melted. Add in the pineapple, eggs, vanilla, and nutmeg.
  5. Spoon the sweet potatoes into the prepared pan and cover with marshmallows.
  6. Bake uncovered for 40-45 minutes or until a knife inserted near the center comes out clean.
