It is creamy, flavorful and just completely delicious. Does it taste like the one at Hard Rock Cafe? I do not know. I have not eaten at one in about nine years and even when I did eat there I do not think I ever ordered the baked potato soup. But that does not change the fact that this soup is delicious and worth making.
Hard Rock Cafe Baked Potato Soup
Ingredients:
- 8 slices turkey bacon
- 1 cup diced yellow onion
- 2/3 cup all purpose flour
- 6 cups low sodium chicken broth, warmed
- 4 cups diced peeled baked potatoes
- 2 cups heavy cream
- 1/4 cup chopped fresh parsley
- 4 cloves garlic, minced
- 1 1/2 teaspoons dried basil
- 1 1/2 teaspoons hot sauce
- 1 1/2 teaspoons black pepper
- 1 cup cheddar cheese, shredded
- 1/4 cup diced green onions (white part only)
Garnish
- turkey bacon
- fresh parsley, chopped
- cheddar cheese, shredded
Directions:
- In a large pot cook the bacon until crisp. Drain on paper towel and crumble. Set aside.
- Add the onions to the pot with the bacon drippings and cook over medium high heat for about 3 minutes or until soft.
- Whisk in the flour and cook for 4 minutes, whisking the whole time.
- Whisk in the chicken broth slowly and cook until thickened.
- Reduce heat to a simmer and add in the potatoes, cream, crumbled bacon, parsley, garlic, basil, hot sauce and pepper. Simmer for 10 minutes (do not boil).
- Add in the grated cheese and green onion. Cook until cheese melts.
- Serve and garnish if desired.
