These pancakes had a very nice orange flavor to them. I did not get a lot of vanilla flavor from them, so the next time I make them I may try using vanilla Greek yogurt instead of plain to see if I can up the vanilla flavor.
Since you never know how much juice you will get from an orange, your batter may be a little thick. If this is the case add some more milk to thin it out some.
Orange Vanilla Greek Yogurt Pancakes
Ingredients:
- 1 cup whole wheat flour
- 1 cup all purpose flour
- 4 1/2 teaspoons baking powder
- 2 teaspoons granulated sugar
- 2 eggs
- 3/4 cup plain non fat Greek yogurt
- 1 cup fat free milk
- 2 oranges, zest and juice
- 2 teaspoons vanilla extract
Directions:
- In a large bowl combine both flours, baking powder and sugar.
- Add in the eggs, Greek yogurt, milk, orange zest, orange juice and vanilla. Mix well.
- Heat a non stick eclectic griddle.
- Spray the griddle with cooking spray and using a 1/4 measuring cup pour the pancake batter onto the griddle. Cook until bubbles start to form. Flip pancake over and cook until done.
