Eggnog Coffee Cake
Ingredients:
Coffee Cake
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 cup light eggnog
- 8 ounces light sour cream
- 1 teaspoon rum extract
- 2 eggs
- 2 1/2 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
Streusel Topping
- 1/3 cup granulated sugar
- 1 tablespoon all purpose flour
- 1 tablespoon unsalted butter
- 1/2 teaspoon ground nutmeg
Glaze
- 1/2 cup powdered sugar
- 1-2 tablespoons light eggnog
Directions:
- Grease the only the bottom of a 9x13 baking pan.
- In a large bowl beat the granulated sugar and butter together until light and fluffy.
- Add in eggnog, sour cream, rum extract and eggs and mix until blended.
- Mix in the flour, baking powder and baking soda just until combined. Spread batter into prepared pan.
- In a small bowl add in all of the streusel ingredients and cut the butter in with a pastry blender or two forks. Sprinkle over the batter.
- Cover and refrigerate at least 8 hours.
- Preheat oven to 350º F.
- Remove coffee cake from refrigerator, uncover, and bake for 35-40 minutes or until an inserted toothpick comes out clean.
- Cool for 20 minutes.
- In a small bowl combine the glaze ingredients, adding as much eggnog as needed to reach desired consistency.
- Drizzle over coffee cake.
