Apple Cranberry Muffins

Apple Cranberry Muffins: Savory Sweet and Satisfying

These muffins are moist and flavorful. The sweet apple and tart cranberries are a great combination. They are a good choice for the holidays.

Apple Cranberry Muffins

Ingredients:
  • 1 egg
  • 4 tablespoons unsalted butter, melted and cooled
  • 1/2 cup granulated sugar
  • 1 large orange, zested
  • 1/2 cup fresh orange juice
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground ginger
  • 1 1/4 cups peeled and diced apples (1-2 apples)
  • 1 cup fresh cranberries
Directions:
  1. Preheat oven to 350º F. Grease a 12 cup muffin tin and set aside.
  2. In a medium bowl whisk the egg lightly.
  3. Add in the melted butter and whisk to combine.
  4. Add in the sugar, orange rind and orange juice. Whisk to combine, set aside.
  5. In a large bowl, shift together the flour, baking powder, baking soda, cinnamon, nutmeg, allspice and ginger.
  6. Make a well in the dry ingredients and pour in the wet. Stir with a spoon, just until blended.
  7. Fold in the apples and cranberries.
  8. Fill the prepared muffin tin evenly with the batter.
  9. Bake for 30-35 minutes or until an inserted toothpick comes out clean.
  10. Cool muffins in pan for a few minutes and then transfer muffins to a cooling rack to finish cooling.
