These muffins are moist and flavorful. The sweet apple and tart cranberries are a great combination. They are a good choice for the holidays.
Apple Cranberry Muffins
Ingredients:
- 1 egg
- 4 tablespoons unsalted butter, melted and cooled
- 1/2 cup granulated sugar
- 1 large orange, zested
- 1/2 cup fresh orange juice
- 1 cup all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ground allspice
- 1/4 teaspoon ground ginger
- 1 1/4 cups peeled and diced apples (1-2 apples)
- 1 cup fresh cranberries
- Preheat oven to 350º F. Grease a 12 cup muffin tin and set aside.
- In a medium bowl whisk the egg lightly.
- Add in the melted butter and whisk to combine.
- Add in the sugar, orange rind and orange juice. Whisk to combine, set aside.
- In a large bowl, shift together the flour, baking powder, baking soda, cinnamon, nutmeg, allspice and ginger.
- Make a well in the dry ingredients and pour in the wet. Stir with a spoon, just until blended.
- Fold in the apples and cranberries.
- Fill the prepared muffin tin evenly with the batter.
- Bake for 30-35 minutes or until an inserted toothpick comes out clean.
- Cool muffins in pan for a few minutes and then transfer muffins to a cooling rack to finish cooling.
