When I first saw this salad on Pinterest I had high hopes for it. It was an interesting salad with many different textures and flavors. Plus I have been on the hunt for quinoa recipes.
This salad did not disappoint! You have quinoa mix with sweet juicy mango, chewy raisins, and crunchy almonds all topped with a fresh orange dressing. What a refreshing and great tasting salad!
Quinoa Salad with Mango, Raisins and Almonds
Ingredients:
Quinoa Salad
- 1 cup quinoa
- 2 cups water
- 1 large mango, peeled and chopped
- 1 cup raisins
- 1 cup almonds, chopped
Orange Citrus Dressing
- 1 large orange, zested and juiced
- 1/4 cup olive oil
- 1 tablespoon honey
Directions:
- Add the water and quinoa to a medium saucepan and bring to a boil.
- Cover, reduce heat to low and simmer for 15 minutes or until the water has been absorbed and the quinoa is nice and fluffy.
- Let the quinoa cool to room temperature.
- In a large bowl, combine the quinoa, mango, raisins and almonds.
- In a small bowl whisk together the orange juice, orange zest, olive oil and honey.
- Pour the dressing over the quinoa salad and mixed well.
